Simple Herb and Mustard Potato Salad

Tried this one out tonight along side my pineapple teriyaki skewers and it turned out surprisingly successful. Here is what you need to serve about 5 people. You can cut the recipe in half to serve 2-3.

Here is what you need:

Around 1kg small potatoes (I prefer a mix of red and yellow)

2 tbls olive oil

2 tbls red wine vinegar

2 tbls whole grain mustard

1 tsp liquid honey

Various fresh herbs (parsley, oregano, basil, dill etc)

1/2 cup chives

Salt and Pepper to taste

Bring potatoes to a boil until soft (around 10-12 minutes)

While the potatoes are boiling, mix the other ingedients in you salad bowl. Set aside.

Cut potatoes into bite sized pieces and mix them into your dressing and voila!
